1. INTRODUCTION:
At the dawn of the 21st century, the founders of Ibersélec were in the north of Spain, in Pamplona. Here, one of the founders, Caceres native Sotero Pérez, was involved in another business and was yet to discover his life’s project, which would awaken little by little through the comments of everyone in his town who tried the family slaughter’s home-made cold meats which gradually grew famous.
2. AWAKENED PASSION:
Together with the other founder, Navarro native Jesus Esparza, the project was conceived and the passion for the professional dedication in the preparation of the best Iberian pasture product was born.
In the search for the best location, the project took shape in the Extremadura land of Montánchez, a magical town known as “the cradle of ham curation” since the 12th century.
3. ARTISAN SPIRIT:
This enterprising adventure began its path reviving the artisan spirit: personal treatment of each piece as a living being and a unique work of art. This sort of spirit runs against the industry trend that, in general, focuses on mass production: “maximum quantity in the minimum time”. Such treatment lowers this Spanish gastronomical heritage to an industrial product lacking in personality and quality.
4. THE DIE IS CAST!:
Thanks to their resources and quality commitment, the founders allowed themselves the luxury of choosing the finest ingredients for their project: the purest and most noble animals, the richest virgin pasture, the highest quality supplementary feed, the art of traditional and most prestigious curation. The support of technology provides the final touch to the magical Montánchez Sierra winds.
5. NEW HORIZONS:
This “premium” spirit attracted a group of Japanese entrepreneurs who fell in love with the project, adding even more power and strength to it, and the jewel of the Extremadura Pasture came to seduce the appetite of the Japanese, lovers of gourmet products par excellence.
6. TOWARDS A NEO TRADITION:
The great success has not held back the initial obsessive spirit for quality. On the contrary, it has convinced them of their obligation to continue their mission, maintaining their size as a company with the aim of preserving its spirit of quality.
Ibersélec is following a path that could be called a NEO TRADITION:
– of gastronomic heritage with which all Spaniards are proud – of a cleaner and less intensive operating model, which is founded on knowledge and know-how of local communities.
